Island Style Shredded Beef

This tender shredded beef is overflowing with flavor! I love to eat this dish with a side of plantain chips, while my husband prefers it served over basmati rice. Plus you can prepare it using either a slow-cooker or in less time using an Instant Pot!

Ingredients

  • 3 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons dried thyme
  • 2 teaspoons ground ginger
  • 1 teaspoon ground turmeric
  • 2 teaspoons ground cloves
  • 1 teaspoon ground black pepper
  • 2 pound chuck roast
  • ΒΌ cup water or bone broth (link)

Directions

In a bowl, mix all of the seasonings together. Then rub the seasoning mixture all over the chuck roast.

Place the chuck roast in the Instant Pot. Pour water or the bone broth around the roast (not on top.)

Close and lock the lid. Set to MANUAL on high pressure and set cooking time to 90 minutes. Allow pressure to release naturally when cooking time is complete.

The chuck roast will be tender and easy to shred. Transfer to a serving dish, pour some of the juices from the pot over the shredded beef, and garnish with fresh mango salsa.

As an alternative to the Instant Pot, use a slow cooker set to low for 8 hours.
