In a bowl, mix all of the seasonings together. Then rub the seasoning mixture all over the chuck roast.
Place the chuck roast in the Instant Pot. Pour water or the bone broth around the roast (not on top.)
Close and lock the lid. Set to MANUAL on high pressure and set cooking time to 90 minutes. Allow pressure to release naturally when cooking time is complete.
The chuck roast will be tender and easy to shred. Transfer to a serving dish, pour some of the juices from the pot over the shredded beef, and garnish with fresh mango salsa.
As an alternative to the Instant Pot, use a slow cooker set to low for 8 hours.
