Dice potatoes into 2” cubes. Place in large pot and fill with water just until potatoes are covered. Bring to a boil.
After about 15 minutes (or until potatoes are soft), remove from heat and drain water.
Add bone broth, ghee, garlic powder, salt and pepper. Use a hand mixer to combine until potatoes are creamy and smooth.
Steam (covered) over boiling water for 4 minutes. Remove from heat. The broccoli will be crisp and slightly tender.
Plate the chicken, potatoes, and broccoli for a complete meal.
The juices produced from the roasted chicken recipe are delicious drizzled over the potatoes and broccoli as a finishing touch!
