Mashed Potatoes, Chicken & Broccoli

These potatoes and broccoli pair wonderfully with our “Roasted Whole Chicken” recipe. While the chicken is roasting, here's a quick recipe for some amazing sides.




Mashed Potoatoes

  • 6 medium to large potatoes
  • 1 ½ cup bone broth (or coconut milk)
  • 3 tablespoons of ghee (or olive oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley
  • Salt and ground black pepper to taste


  • 1 large head of broccoli cut into florets
  • Salt and ground black pepper to taste


Mashed Potatoes

Dice potatoes into 2” cubes. Place in large pot and fill with water just until potatoes are covered. Bring to a boil.

After about 15 minutes (or until potatoes are soft), remove from heat and drain water.

Add bone broth, ghee, garlic powder, salt and pepper. Use a hand mixer to combine until potatoes are creamy and smooth.


Steam (covered) over boiling water for 4 minutes. Remove from heat. The broccoli will be crisp and slightly tender.

Plate the chicken, potatoes, and broccoli for a complete meal.

The juices produced from the roasted chicken recipe are delicious drizzled over the potatoes and broccoli as a finishing touch!
