Combine all the ingredients in a bowl (except the sunflower oil) and whisk together. Slowly add the sunflower oil and continue to whisk until a creamy consistency develops.
Tip: If you have an immersion blender or food processor, use it! Not only does it speed up the process, but it helps to whip up the mayo into a creamy consistency.
